Theres nothing more comforting than a big warm bowl of yummy Spag Bol right!?
But surely that isn't allowed on slimming world... WRONG!

This delicious spaghetti bolognese recipe is totally free on slimming world and can be modified into pasta bakes, chillis and lasagna.



Ingredients


1 stick celery (chopped into small chunks)
1 carrot (grated)
1 medium red onion (finely diced)
2 cloves garlic (crushed)
2 tins tomatoes
Bay Leaf
Mixed herbs or Italian seasoning
Worcester sauce, or Henderson's relish if you are from Sheffield like me
fry light
Tbsp Tomato puree
1 chicken stock cube
1 tsp sweetener

mince (5% fat) or quorn

Salt and pepper to taste




1. If you are using mince, start by frying this off in your fry light to get some colour on it.
Colour = flavour
If you aren't using mince skip to step 2

2. Throw the onion, celery and carrot into a big wide pan with plenty of fry light.
sauté off until soft and tender then add in the garlic and cook for a further 2 mins. Be sure not to burn the garlic

3. Now add in the remaining ingredients, apart fromthe quoin if you are using that.
Also fill the 2 tomato tins with water and add to the pot.
leave to simmer with the lid on for an hour, stirring from time to time.





4. Taste what you have got and adjust salt and pepper accordingly. Also try adding a tsp of sweetener. Previously I would have always added sugar to any tomato based sauce. It brings out the flavour of the toms.

5. Finally if using quorn add this in at the last minute and cook for literally a couple on minutes.
overcooked quorn is pretty gross.


Now to make my indulgent pasta bake


1. simply stir pasta through the sauce. I like shells as it catches the sauce in the holes.

2. Place in individual or a family sized dish

3. Blob over some fat free quark (free on SW and uber creamy)

4. Finally grate over your healthy extra a allowance of cheese.
I normally find I don't quite need my full allowance so carry some over but you might want it extra cheesy.

5. Bake at 180 degrees for 20 minutes until nicely golden on top



Serve with a nice side salad, or just on its own on the sofa in your dressing gown (depending what sort of day you have had)
